Super Easy Recipe: Enoki Mushrooms in Garlic Sauce 蒜蓉金针菇

I love enoki mushrooms in garlic sauce. I recently realised that enoki mushrooms are great as a replacement to carbohydrates. Enoki mushrooms, also known as enokitake in Japan, can be added to soups as well as in salads and stir-fries. Its mild flavor leads to absorbing the flavour of the other ingredients used to cook with it. If you wanna cut down your carbo intake but still want to enjoy your typical soup dishes like prawn noodle soup or fish ball noodle soup etc, just replace the noodles with enokitake. I super love this combination. How I wish that more hawker stalls in Singapore can  start to provide this option instead of just offering noodles.

Serves 4 – 5

400g of enoki mushrooms
1 bulb of garlic – chopped
4 – 5 tablespoons of water
3 tablespoons of light soya sauce
1 stalk of spring onion – chopped
0.5 teaspoon of sugar
