Benja Chicken Multigrain Rice Recipe

MULTIGRAIN RICE (Serves 4)

You can use the rice combo below or use 500g of any type of rice

  • 60g Multigrain
  • 60g Black Rice
  • 60g Brown Rice
  • 320g Thai rice
  • 700ml water
  • 30ml corn oil
  • 20g lemongrass (cut into 3cm long)
  • 20g sliced ginger
  • 35g shallots (cut in halves)
  • 20g lightly crushed garlic
  • 25g Knorr chicken powder
  • 5g salt

Steps:

  • Soak multigrain, brown rice, black rice for 1 hour
  • Strain them, mix with washed Thai rice, pour in the water, into rice cooker
  • Preheat a pan, add oil, stir fry the lemongrass, shallot, garlic and ginger
  • Stir fry till slightly brown and fragrant, add into the rice cooker
  • Add in the seasonings and water then start cooking

TURMERIC LEMONGRASS MARINATED CHICKEN BONELESS LEG (SERVES 4)

  • 4 pcs boneless chicken leg
  • 80ml corn oil
  • 20g lemongrass
  • 3g ginger
  • 25g shallots
  • 15g garlic
  • 5g Knorr chicken powder
  • 5g salt
  • 4g turmeric powder
  • 3g coriander powder
  • 2g cumin powder
  • 2g white pepper

Steps:

  • Use food processor to finely blend the garlic, ginger, shallot, lemongrass and oil into paste
  • Transfer to a preheat pan at low heat, cook till fragrant
  • Add in the remaining seasoning and continue to cook in low heat for about 10 mins
  • Remove from the heat, let it cool down
  • Pat dry chicken boneless leg
  • Coat the chicken with the cooked paste, cover it and marinate for 4 hours

CHILLI SAUCE

  • 50g red chilli
  • 10g chilli padi
  • 25g red onion
  • 20g ginger
  • 15g garlic clove
  • 5g salt
  • 5g sugar
  • 30ml orange juice
  • 8ml sesame oil
  • 12ml vinegar
  • 5g coriander leaves

Steps:

  • Put all ingredient into food processor, blend it
  • Pour into container, keep in chiller for use whenever you need it
