This fish maw & seafood soup is an excellent dish to be added on your reunion dinner menu. Both fish maw and sea cucumber absorb the flavours of aromatics and sauces very well, making them perfect to be added in soups or gravy based dishes.

Fish maw is dried fish air bladder. Rated as one of the precious Chinese ingredients along with abalone & sea cucumber, fish maw is very nutritious and is also full of collagen. Best of all, it’s free of cholesterol. Many Chinese believe that consuming fish maw will help improve their complexion.

Despite its name, sea cucumber is actually not a plant. They are marine animals and are found on the sea floor worldwide. Although the Chinese has long considered sea cucumber as a delicacy, it is only in the recent years that science has validated their health benefits effects. Sea cucumber has shown therapeutic values such as wound healing and anti-cancer.

Ingredients:
Serves 8

1.5 litre of chicken stock
25 g of fish maw (before soaking)
1.5 pieces of sea cucumber
200 g of crab meat
1.5 tablespoons of oyster sauce
175 g of prawns – de-shelled & de-veined
Thicken the soup up with potato starch solution (you can mix 2 teaspoons of potato starch with just enough water to dissolve them)
2 beaten egg
