Collaboration: Jap-Viet Noodle Salad with Hakubaku Organic Soba

Here’s a quick Bun Thit Nuong recipe for you using Hakubaku organic soba noodles instead of rice noodles. Hope you like it!

Pork shoulder -300grams sliced into two equal pieces
Half a Japanese cucumber sliced thinly
1/2 cup of roasted peanuts
2 eggs cooked into omelette and sliced thinly.
2 bundles of hakubaku soba

Sauce ingredients
4 tablespoon lime juice
4 tablespoon fish sauce
2 teaspoon fine sugar
3 cloves garlic chopped
3 pieces bird eye chilli chopped
Mix well

Marinate the pork for at least two hours
Ingredients for marinate-
Two stalks lemon grass, bruised to release the flavour.
4 tablespoon fish sauce
1 teaspoon sugar
1 teaspoon salt
5 cloves garlic chopped finely
5 shallots chopped finely

Boil soba until desired softness and rinsed.
Lay onto a big bowl and lay the cucumber strips and omelette strips on top.
Pour peanuts on top
Pan fry or air fry pork shoulder until cooked and sliced. Place on top of noodles.
Pour sauce over, mix up well and serve.
