King of Ribs // 排骨王 // Pork Rib King is one of the must-order dishes when we eat at chze char stalls in Singapore. I’ve been eating this since I was young and I doubt I will ever get sick of it because it’s simply too delish.

Serves 3 – 4 person

Marinating Ingredients for pork


600g of pork chop or pork ribs

1.5 teaspoons baking soda

1 tablespoon oyster sauce

0.5 teaspoon salt

0.5 teaspoon sugar

0.5 teaspoon five spice powder

0.5 teaspoon curry powder

1 teaspoon sesame oil

1 tablespoon light soy sauce

1 tablespoon Shaoxing Huatiao cooking wine

1 egg

3 tablespoons of cornstarch

A few dashes of pepper

Tangy gravy for pork


2 tablespoons plum sauce

1 tablespoon chilli sauce

2 tablespoons ketchup

2 tablespoons A1 sauce

2 tablespoons HP sauce

1 tablespoon sugar

some cornstarch solution

2 – 3 cloves of garlic

1 cup water
